Jibbi Coffee Roasters is one of those coffee spots I probably wouldn’t have found on my own, and I’m really glad someone pointed me in the right direction.
A good friend of mine, Bash, the owner of Cafe Bali (in the Philippines) and an incredible barista herself, introduced me to Jibbi. She spoke so fondly of her, how she’s been following her journey for years and how much she admires her craft.
Jibbi is an award-winning barista, and honestly, after visiting her cafe, it’s easy to see why. You can search more about her if you want to know more.

A MUST VISIT
If you’ve been following me on my socials, you’ll know that one of my little hobbies in Sydney is exploring good coffee spots, especially cafes that stay open after 3 pm. In case you don’t know, it’s hard to find open cafes after 3pm in Sydney, so when I learned about Jibbi opening a cafe and it closes after three, I added it to my list.
Also, I’ve always been on the lookout for coffee shops that serve fresh pour overs, not just batch brews sitting on a warmer. It’s surprisingly hard to find places that still take the time to brew coffee cup by cup.
WHY IT STANDS OUT
Let’s address it upfront: Jibbi isn’t cheap. It’s definitely on the more expensive side compared to your everyday Sydney coffee. But I see it this way — Jibbi isn’t meant to be a quick caffeine stop — it’s a coffee experience.
You can tell a lot of thought goes into a cup. The beans, the extraction, the way the coffee is served. The baristas take their time, and you’re encouraged to do the same. Curiosity will push you to ask questions.
Jibbi Coffee Roasters is the kind of place you go to when you genuinely enjoy specialty coffee. When you care about flavour, balance and the story behind the cup.

THE COFFEE
Long black is my jam. I lean towards iced drinks, and when pour-over is available? Even better.
Their pour-over coffee is brewed fresh not rushed, and you can actually appreciate the coffee even more as Jibbi explains the process to you.
It’s the kind of cup you can sip slowly. Depending on the beans, the coffee can be crisp, refreshing, and layered with flavour. It’s the kind of coffee that doesn’t need milk to shine (I do enjoy a milk-based coffee from time to time).
NOT FOR EVERYONE
Jibbi is for people who love specialty coffee, those who appreciate pour-overs, well-extracted espresso, and those that respect the process. It’s the kind of place you bring fellow coffee lovers to and say, ‘you’ll get why I like this’.
If you enjoy supporting people who take their craft seriously and you don’t mind paying a bit more for quality, then this place is absolutely worth it.
